About a month ago, I was hosting a get together at our house. Normally I am all about throwing a party for people- there is just something about cooking for other people that warms my soul. I love feeding people.

Hell, I’m 75% of the way there now.

But for whatever reason, I was feeling pretty blah about it and couldn’t come up with any ideas. So I was chatting with Trisha over at The Lazy Mom Cooks, and she threw out the idea of a pear and brie crostini appetizer. I didn’t end up doing it, but the idea lodged itself into the back of my brain and stayed there, festering until I just had to do it.

This is a great snack or party appetizer, because it takes next to no time or effort to do. Toast up some bread, load it up, do a little sprinkling and drizzling, and you’re good to go.

I think these would look so pretty with a tender little sprig of fresh thyme on them, but the grocery store was out and I didn’t feel like going on a wild goose chase. I sprinkled with dried thyme and they were delicious- crunchy, soft, sweet and sour, all in one bite!

This Pear and Brie Crostini with Balsamic and Thyme is the ultimate snack or appetizer- fast to make, almost no dishes, and everyone loves them!

Ingredients

  • 1 pear, sliced 1/3
  • 8 slices baguette
  • olive oil
  • 81/4 slices brie
  • 8 sprigs fresh thyme, no woody stem pieces
  • Balsamic glaze

Directions

  1. Preheat a grill on medium heat. Drizzle one side of the baguette slices with olive oil, then place oiled side down on the grill. Toast until crisp and browned. Remove to a plate, toasted side up.
  2. Add one slice of pear and one slice of brie. Top with a thyme sprig (or sprinkle with dried thyme) and drizzle with balsamic glaze. Serve.

      You can buy it in some grocery stores, but you can also buy it here: http://amzn.to/2mWHFVk. I use it on tons of things!

      You can make your own balsamic glaze by reducing balsamic vinegar or most grocery stores carry small bottles of it now.
