Weekend Brunch: Banana Chocolate-Chip Muffins

Ingredients

  • 3 over-ripe bananas
  • 1/3 c butter melted
  • 1/2 c brown sugar
  • 1/4 c sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 c flour
  • 1 c semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350°F. Mix together melted butter and mashed bananas. Mix in the sugars, egg and vanilla. Mix in the baking soda and salt, then add in the flour. Stir in the chocolate chips. Pour mixture into a 12-well muffin pan lined with paper liners. Bake for 20-23 minutes, or until toothpick inserted comes out clean (or more likely, coated in deliciously melted chocolate).
