  • 2 tablespoons olive oil
  • 1 chicken cut up into pieces
  • 2 medium onions cut in 1/4 inch slices
  • 2 cloves garlic minced
  • 1/2 cup dry white wine
  • 1 16 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 2 teaspoon kosher salt
  • 2 tablespoons Italian seasoning
  • 1 teaspoon celery seed
  • 1/4 teaspoon pepper

  • Turn Instant Pot to SAUTE- High. When display reads HOT, add 1 tablespoon olive oil to inner pot, along with sliced onions. Sauté onions until soft and translucent, then add garlic. Cook for another 1-2 minutes, then remove from pot and set aside.
  • Season chicken with kosher salt and pepper, then add half the chicken to the pot to sear. Cook for 4-5 minutes per side, then remove from pot and repeat with remaining chicken. Set aside.
  • Deglaze the inner pot with the wine, using a wooden spoon to scrape any browned bits off the bottom of the pot. Place chicken back in pot; top with sautéed onions and garlic, diced tomatoes, tomato sauce and spices.
  • Lock lid into place and ensure release valve is set to SEAL. Hit CANCEL, then MANUAL. Set timer for 25 minutes.
  • When timer has finished, allow to naturally release for at least 10 minutes, then quick release the remaining pressure.
  • Serve over buttered rice or noodles.
