Coat a baking sheet with foil or parchment paper and sprinkle with olive oil or cooking spray to prevent sticking.
After lying fish on foil, sprinkle liberally with Old Bay seasoning according to your taste (I probably use 1½ tsp for a 6 inch piece). Sprinkle with olive oil and dot with pats of butter.
Bake for 13 minutes, or until fish is cooked through in the middle and flakes easily with a fork.
