Instant Pot Stuffed Pepper Soup

This flavorful soup is perfect for cold nights! All the flavors of traditional homestyle stuffed peppers, but in soup form. This easy Instant Pot recipe is practically dump-and-go, and is ready in a flash!

Ingredients

  • 1 lb Italian sausage
  • 1/2 lb 90% lean ground beef
  • 1 large onion diced
  • 2 green bell peppers seeded and diced
  • 1 quart beef stock
  • 1 14 oz can diced tomatoes
  • 1 14 oz can tomato sauce
  • 1 teaspoon salt
  • 1 tablespoon Italian seasoning
  • 1 teaspoon fennel seed
  • 1 cup jasmine rice

Instructions

  • Heat an Instant Pot on the SAUTE setting. When the display reads "HOT," add the sausage and ground beef. Break up using a wooden spoon or other implement, and sauté until browned. If desired, drain any fat. 
  • On top of the ground beef, add the onion, bell pepper and seasonings. Pour in the stock and stir. 
  • Sprinkle the rice evenly over the top, then top with the tomato sauce and diced tomatoes.
  • Lock the lid and hit CANCEL. Set the pot for HIGH pressure for 5 minutes. Be sure the pressure valve is set to SEAL.
  • After the timer has finished, allow to naturally release for 8 minutes. then quick release the remaining pressure. Stir to combine and serve. 

Notes

If you prefer a thicker consistency, cook for 25 minutes.
